I cut my small waxy potatoes (Noirmoutier) into quarters and there was no problem with them cooking in time (I did give the dish an extra 10 minutes because the chicken thighs were huge). The filling on its own was delicious, but in the squash, with the lashing of cream and the melted cheese, it made a lovely presentation.

I haven't always had much luck with getting the batter to rise in a toad, but this worked very well. Used windfall apples from the garden and then foraged some blackberries from a local bush while the sausages were in the oven. Not my brightest idea to use baby new potatoes, because it took ages to slice them, but this was really delicious and tasted much lighter and fresher than I was expecting. I really appreciate that she understands how busy life is and has offered recipes that are virtually "hands off" -- the tagline for the book after all is "simple dishes that look after themselves. There are many meat, chicken, and fish offerings and some vegetarian mains, and many vegetable side dishes and fruit heavy desserts.Next time would bake at a higher temperature for the last 15 minutes to achieve crispy brown chicken skin. I've been wanting to try this since I got the book, but recent events have made it difficult to get ingredients. The chicken was juicy with crispy skin, and the vegetables cooked down in the red hot chilli oil from the spicy ‘nduja. Maybe a bit gratuitous for a Monday night but it feels mighty nice to not toil over the stove, eat, and then trudge back to the kitchen to clean up everything.

I did not do individual papillotes but used a covered gratin dish for 15 minutes and then 5 more minutes uncovered. I halved the quantity of potato and lamb, but left the tomatoes, onion and olives the same for two people.When I first tasted this I felt it was bland and disappointing but I must have underseasoned it, as a good grind of salt and pepper really improved it. Served with Rosemary Potatoes recipe, wasn't able to add to pan for last part of cook time like other people have suggested.
